Food waste remains a major issue in developed countries—especially when it comes to products with short shelf lives. Bread is one of the biggest culprits: attractive for only a few days, and often discarded once it goes stale. But it hasn’t always been this way. Many cultures have long traditions of repurposing leftover bread into delicious, comforting meals. Inspired by this, we developed Ze’s Break—a spice mix for Açorda, a traditional Portuguese bread soup. The product is sold directly at bakeries—meeting people at the source and offering an easy, culturally-rooted solution to food waste.
